Healthy Veggie Burrito

  • 1 medium size tortilla
  • 2 slices tofu
  • ½ mixed and roasted vegetables-squash,
  • white onion,
  • eggplant, and
  • bell pepper.
  • Lettuce and
  • red cabbage as needed
  • 1tsp pesto sauce
  • 1tsp olive oil
  • Brown strips of tofu on a hot pan with little oil.

 

On a separate pan, heat the tortilla until brown on both sides. Set-up everything and add roasted vegetables. Drizzle pesto sauce and roll tortilla to form burrito. Serve!
